Antimicrobialresistance in the food-chain

The increasing prevalence of antimicrobial-resistance (AMR) in bacteria is one of the most serious threats to public health. Although originally considered a problem to human health, the emerging crisis of antimicrobial-resistance requires a one health approach, considering human, animal and environmental reservoir. In this regard, of particular concern is the high use of antibiotics in livestock production systems, as it is known that the emergence and selection of resistant bacteria can be associated to the antimicrobial administration due to ecological pressure. From a public health perspective, the possible transmission of resistance bacteria and genes from food-producing animals to humans is considered a major risk because of the possible dissemination via direct contact with livestock or via the food-chain. In this context of growing antimicrobial-resistance concern, our research line is focusing on different food and food-related matrices to evaluate the presence of AMR bacteria and genes "from farm to fork", taking advantage of the benefits of culture-independent methods. In particular, we are actually focusing on the milk production environment applying a shot gun metagenomic sequencing approach to characterize the microbiome and the resistome of different dairy farms.
